Twice Baked Bacon & Cheddar Taties![]() INGREDIENTS: 4 Large Baking Potatoes, skins cleaned. 6 Slices Meat Cuisine Middle Bacon 1 Cup Cheddar cheese, grated 1/2 Cup Sour Cream 1/4 Cup Fresh Chives, chopped 1/4 Cup Parmesan Cheese Salt, pepper & Paprika to taste Olive Oil DIRECTIONS: 1. Preheat oven to 180 degrees celsius. 2.Rub Potato skins with olive oil and salt 3.Place in oven and bake until center is soft (approximately 45 minutes - 1 hour) 4.While potatoes are cooking, fry up bacon in a non-stick fry an until crispy, then cut into bits. 5.Remove potatoes from oven and leave to cool, when they are cool enough to handle, slice each one in half lengthwise. Leave oven on. 6.Scoop out the flesh, leaving a thin rim around the potato skin, and place flesh in a mixing bowl. 7.Mash the potatoes with a fork or masher (you don't have to be too pedantic about the consistency). 8.Stir in bacon bits, 1 cup shredded Cheddar cheese, sour cream, chives, salt, and pepper. 9.Spoon potato mixture into the potato skins and return to the baking tray. 10.Sprinkle with reserved 1/2 cup Cheddar cheese, Parmesan cheese, and paprika. 11.Return to oven and bake until potatoes are lightly browned and heated through. |
