4x Meat Cuisine Skin On Chicken Breast
1 Cup Flour
Salt & Pepper to taste
1 cup dried porcini mushrooms
2/3 cup Marsala wine
1/4 cup parsley, roughly chopped
Place porcini mushrooms in a bowl of warm water for 20- 30 minutes. Strain the water and set aside. Pat the mushrooms dry and chop
Cover the chicken breasts in flour, salt & pepper. Pour a little olive oil into a pan and fry chicken until both sides are brown.
Add the porcini mushrooms, Marsala wine and about 1/4 cup of the porcini water. Simmer for about 20 minutes.
Take the chicken from the pan and hicken the sauce for a few more minutes or until it is reduced to the desired thickness. Place chicken on serving dish, pour over the sauce and serve with some crisp green vegetable ie broccoli or asparagus.
