2 boneless/skinless chicken thighs cut into bite sized chunks
1 cup bread crumbs
1 cup corn flakes, crushed
1 egg, whisked
Seasonings (Optional) such as cajun, mexican, italian, etc
Preheat oven to 180.
In a large bowl mix together bread crumbs, cornflakes, parmesan and seasoning until well combined.
Dip each chicken piece in the whisked egg then into the bread crumb mix making sure they are well covered.
Space nuggets evenly on a baking tray and spray with olive oil.
Bake for 15-20 minutes or until bread crumbs turn golden brown and crispy.
