500g Beef Mince
2 teaspoons chili powder
2 teaspoons cumin
Pinch of salt
2 Bags Corn Chips
1-2 cups cheese, grated
1 large onion, chopped
2 tomatoes, chopped
2 Tbsp Tomato Paste
1/2 Cup black olives, chopped
1/4 Cup Sour cream
1.Add oil and onion to a pan and cook over a medium heat until soft. Add mince and cook for 5 minutes, breaking up the mince to cook faster. Drain and add spices.
2.Add chopped tomatoes and tomato paste, simmer until sauce is thick.
3. Line bottom of large baking dish with corn chips then cover with a layer of cheese and olives and then a layer of mince mixture.
4. Repeat until mince is used up, top layer being cheese and olives.
5. Bake in preheated oven (180) for about 15 minutes or until cheese has melted and browned slightly.
6. Serve with cream cheese or guacamole.
