Pork Rib Eye (2kg Pack)
This premium cut of 100% New Zealand Pork can be roasted or sliced as steaks. As it come from the shoulder it is a sweet meat (see serving suggestion below)

New Zealand Pork Roast
1.4 kg New Zealand Pork in the piece
1/4 cup peanut oil
2 tablespoons flour
1 1/2 cups vegetable stock
1 teaspoon of vegemite
1 tablespoon finely sliced mint
salt and pepper to taste
- Pre-heat oven to 200°C, place oil into baking dish and place into oven for 2 minutes until oil is hot. Add the Scotch fillet of Pork and cook for 30 minutes, turn and cook for a further 30 minutes. Remove from oven and leave to stand lightly covered with tin foil for 20 minutes before serving.
- For the gravy, pour off ½ the fat remaining in baking dish then sprinkle flour over and mix. Place dish on a low heat on the stove and whisk until golden brown and smooth in texture. Slowly stir in stock until smooth then add vegemite and stir until thickened. Stir in 1 tablespoons of finely sliced mint. Season to taste with salt and pepper.
